    HUMMINGBIRD CAKE

    Step 1
    Sift the following ingredients together:

    3 cups flour
    2 cups sugar
    1 teaspoon baking soda
    1/2 teaspoon salt
    1 teaspoon ground cinnamon

    When finished add

    1 cup chopped pecans and set aside.

    In another bowl combine:

    3 eggs, beaten
    3/4 cup organic apple sauce
    1/4 cup canola or vegetable oil
    1 1/2 teaspoon vanilla
    1 cup crushed pineapple
    2 cups chopped bananas.

    Step 2
    Stir all together by hand, NOT in a mixer, until well mixed. Do
    NOT beat. Fold liquid mixture into dry mixture until well-mixed.
    Again, do NOT beat

    Step 3

    Divide batter into three 9-inch cake pans that have been greased
    and covered with a fine layer of bread crumbs. Bake in a 325 degree oven for 25-30 minutes, or until set in the center. Make
    sure not to overbake the cake. It makes all the difference between
    having a wonderful cake or a dry mass of flour and sugar.

    Step 4
    Cool cakes, then ice with:

    8 ounces light or fat free cream cheese, softened
    1/2 cup butter, softened or low fat margarine, "salt free"
    1 1/2 pounds confectioner's sugar
    1 teaspoon vanilla extract

    Beat together cream cheese and butter until mixed, then beat in
    sugar. Finally, add vanilla.

    Springtime Daffodil Cake
    This yellow and white cake will give everyone spring fever!

    For the Cake
    10 large egg whites
    1 teaspoon cream of tartar
    1/4 teaspoon salt
    1 1/4 cups granulated sugar
    1 teaspoon vanilla extract
    1 cup cake flour, sifted
    5 egg yolks, lightly beaten
    1 teaspoon grated orange peel
    4 drops yellow food coloring

    For the Glaze
    1 1/4 cups confectioners’ sugar
    3-4 tablespoons orange juice
    3 drops yellow food coloring

    For the Decorations
    6 large yellow gumdrops (3 for flower centers, 3 for petals)
    6 large white gumdrops (2 for flower centers, 4 for petals)
    1 tablespoon white nonpareils
    1 tablespoon yellow nonpareils
    12 spearmint leaves


    Preparation Time: 45 minutes plus cooling
    Cooking Time: 40-50 minutes
    Serves 12

    Making the Cake
    1. Preheat oven to 350°F. In a large bowl, using an electric mixer set on high speed, beat egg whites until foamy, about 1 minute. Add cream of tartar and salt; beat until soft peaks form. Gradually add sugar and vanilla; beat until stiff peaks form, about 2 minutes.

    2. Using a rubber spatula, fold in flour until blended. Divide batter evenly between 2 bowls. Fold in egg yolks, orange peel and food coloring to 1 bowl of batter until blended. Spoon batters alternately into a 10-inch tube or angel food cake pan. Bake until golden, 40-50 minutes.

    3. Invert cake onto the neck of a heavy bottle to cool for at least 1 hour. Run a knife around outer and inner edges to release cake. Invert cake onto serving platter to glaze.

    Making the Glaze
    1. In a medium bowl, combine the confectioners’ sugar, orange juice and food coloring. Mix until smooth. Spread the glaze over top of cake, allowing the excess to drizzle over edge. Let glaze set, about 15 minutes.

    Decorating the Cake
    1. Cut a small wedge out of the bottom of 5 gumdrops. Sprinkle the sticky centers with nonpareils.

    2. On a sugared surface, flatten spearmint leaves with a rolling pin; trim the edges.

    3. Cut 7 gumdrops into quarters; roll out pieces in sugar to flatten them for the petals. Trim the edges to a petal shape. For each flower, arrange 5 petals on top of the cake. Place an alternate color gumdrop in the center. Place the leaves around the flowers.

    happy b-day Mimi!!! Here's a fun way to beat the winter doldrums. Get some sunblock that smells "beachy". I love Coppertone, it just brings back great memories. Put some on, make a Pina Colada, have fresh fruit chopped for munching, then play the Beach Boys.
    I had a party one horrible winter and after we put sunblock on our spirits lifted. (We really only just put some on our noses) Try it!
