    Default SPAM Recipe Contest!!!

    I am looking for the most creative and doable SPAM recipe! If Mimi served Spam items at her Deli (Felini's), what recipe would she use???

    Here is how the contest will work:

    *Post in this thread your recipes
    *Deadline is February 1st
    *Mimi and I will judge the recipes
    *On February 2nd we will announce the 3 Finalists
    *We will make the finalists recipes and taste test them
    *On February 3rd we will announce the winner!
    *The winner will have their recipe served in Mimi's "virtual" Deli, will receive a nice Twollars donation, and will win a 2lb tin of Mimi's famous mini cookies - www.feliniscookies.com

    Spampernickle

    Spam with dijon on pumpernickle
    garnish with bib lettuce, a tomato slice, and long bread and butter pickles
    Serve with a Felini's almond cookie, I think, and a
    Dr. Brown's Cream Soda.

    scalloped potaters and spam:

    2 cans SPAM
    1 stick of butter
    3-4 Tbls flour
    1 small onion
    8-9 good size potaters
    2 c. milk
    1lb white cheddar x-sharp cheese

    shread cheese, cube SPAM, peel taters and slice thin, chop da onion
    preheat oven to 350
    put butter in pan , to melt...put in chopped onion...til brown....
    add 3-4 Tbls flour..makes a roux (french word for sticky stuff)
    add milk...and use a whisk to ensure proper blending...keep on low heat...it should get thick...mmmm ( also known as a white sauce)
    add 1/2 the cheese and mix well....take off the heat...
    put your SPAM and taters in a big bowl...
    pour mixture over SPAM and taters ( get all the sauce ) and coat well
    put all in a baking pan and cover with foil...put in da oven
    after 45 min..take foil off and sprinkle the rest of the cheese on top
    bake for another 10-15 min (nice golden brown)

    depending on how thin/thick you slice your taters...will depend on how long it takes to cook...
    while its baking...tell the kids or dad to clean up the kitchen cuz you worked hard makin dinna!
    feel free to bake some honey butter bisquits (Pillsbury)

    try to save some for the next day just for yourself...makes a great lunch!

    Wow! Great prizes. I grew up poor in the south, eating spam, squirrel, and cow brains. Now, I have over 300 cookbooks and food-related books as a hobby. I'm currently working on my first cookbook for publication. I've even won cooking contests.

    This one is for me!!

    Where's the virtual deli? Gotta make sure it fits into the menu.

    Does Turkey Spam count?

    "Virtual" deli doesn't exsist. The original plan was to have Mimi make the winning recipe a "Daily Special" at Felini's but she changed her mind. Mimi may be able to tell you what type's of things she has on the menu at the "real" Felini's, and maybe you can work off of that! We are just looking for something that Mimi would serve at Felini's

    from Ruebens to "hammers"
    salads and soups

    Not really a recipe, but cream cheese and spam...yum!

    Slice the spam, spread with softened cream cheese. optionally, place another slice on top and make a spam and cream cheese sandwich...

    Good snack for low-carb diet...

    Oh, and cube the spam up, and throw it in with Kraft mac and cheese. This is a good way to get protein into picky kids

    Spam on a Stick

    cut spam in half inch thick slices then cut that slice down the middle lengthwise.
    Take kabob sticks and skewer them leaving room to hold the skewer.
    pour your favorite BBQ sauce over the spam and grill.
    I like to marinate them as they cook with more BBQ sauce.
    When cooked, Roll the cooked spam in sesemee seeds and grill
    one minute more for flavor.
    Makes a tasty treat!!
